Blackberry Jam Cake

2 sticks (1 cup) unsalted butter
2 cups sugar
5 large eggs beaten
3 cups and tablespoon sifted all purpose flour
1 1/2 teaspoons allspice
1 1/2 teaspoons ground cloves
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup buttermilk
1 teaspoon baking soda
1 cup raisins
1 cup chopped pecans or black walnuts
1 cup seedless blackberry jam
If you want you can skip the first seven ingredients and buy a box spice cake

If you get the box spice cake add the other ingredients, use unsalted butter to make the cake rich.

Making the homemade cake:
In a large bowl use a mixer to cream together butter and sugar until mixture is light and fluffy. Add the eggs and combine the mixture. Into a bowl sift together the flour, allspice, cloves, cinnamon and the salt. In another bowl combine the buttermilk and baking soda. Add the flour mixture to the butter mixture, alternate with buttermilk mixture, beating well.
In a bowl toss together raisins, pecans (walnuts) and the remaining tablespoon of flour and stir mixture into the batter with the jam, stirring until mixture is combined well. Pour into 2 lightly flour 9-inch cake pans. Cook on preheated 325ºF oven, over 40 minutes or until toothpick comes out clean.
 

Carmel Icing

3 cups light brown sugar or dark brown if you like dark icing
1 cup evaporated milk
1 stick (1/2 cup) unsalted butter

In a sauce pan combine the brown sugar, the evaporated milk, and the butter, cook this over low heat stirring until the sugar is dissolved. Cook it undisturbed until it comes to a boil. In a mixing bowl pour the hot mixture and beat it until spreadable. If the icing gets to hard to spread, dip the icing spatula in hot water.

Make sure the cake has cooled off before icing them or start making the icing for your cake.
