3 T Canola Oil
1 c Rice
1 t Garlic, minced
1/2 Onion, diced (or onion powder)
3T Chili Powder (or to taste)
1 can Petite Diced Tomatoes
1-1/2 c Water
Salt and Pepper to taste

Directions:
Directions:
Heat oil in large frying pan and then add rice. Add onion and stir together until rice is golden. Add garlic, chili powder and stir. Add tomatoes and water, cover and bring to boil. Reduce heat to simmer. Cook until moisture is absorbed.

Sometimes I add leftover meat or chicken. Always good on Mexican Food night!
