7 egg room temp separated
1/4 tsp. salt
1 c. sugar
1/2 tsp. vanilla
1/2 tsp. lemon extract
1 c. cake flour sifted & measured
2 tsp. baking powder
1 heaping tsp. cream of tartar

Directions:
In a large mixing bowl, beat yolks & salt until light and fluffy until lemon colored.
Add sugar a little at a time; beat well. Add vanilla & lemon extract
Measure flour, sift, measure again and sift 3 times. Add gradually folding into egg mixture.
Whip the egg whites until fluffy; add cream of tartar and beat until whites hold up in peaks. Fold into the batter.
Pour the batter into an ungreased 9 inch tube pan. Bake with very slow fire (300º) for 30 minutes then increase heat (325º) for the last 30 minutes. Remove the cake from the oven, and invert the pan, cool and remove from pan.
