1 lb. dried Great Northern Beans
1 meaty ham bone
2 - 3 medium onion, chopped
1 - 2 minced garlic cloves
1 - 2 chopped celery stalks
1/4 cup fresh parsley, chopped
1 cup mashed potatoes, or 1/3 cup
instant potato flakes *
salt & pepper to taste
parsley or chives for garnish

*Sometimes I just add a couple of diced potatoes instead.

Rinse beans and place in a saucepan with enough water to cover; bring to a boil and boil for 2 minutes. Remove from the heat and leave to soak for 1 hour. Drain and rinse beans. In a large kettle, place beans, ham bone, and 3 qts. water. Bring to a boil; reduce heat; cover and simmer for 2 hours. Skim fat if necessary. Add onions, garlic, celery, parsley, potatoes, salt & pepper; simmer 1 hour longer. Remove meat and bone from the soup, then remove the meat from the bone, cut up and return to the soup.Heat through. Garnish with parsley or chives.
