2 hens or 2 large fryers (about 4 lbs. each)
2 medium onion, chopped
1 bell pepper, chopped
32 oz. long spaghetti, uncooked
2 10-oz cans cream of tomato soup
½ cup pimentos (4 oz)
3 cups chopped celery
2 cups canned mushrooms, sliced
1 Tbsp salt
½ tsp black pepper
2 lbs. American Cheese, grated

Boil chicken until tender. Remove from broth, bone and cut up into small pieces. (Reserve broth adding water, if necessary, to make 4-quarts of broth.) Add onion, bell pepper, celery, cream of tomato soup, mushrooms, pimentos, salt, and black pepper to the 4-quarts of chicken broth. Simmer 20 minutes, then add uncooked spaghetti. Cook 20 minutes longer, or until spaghetti is tender. Just before serving top with grated cheese and bake until cheese melts.
