Cranberry Almond Biscotti Recipe

2 ¼ cups of flour
½ t nutmeg
1 cup of sugar
2 eggs
1 t baking powder
2 egg whites
½ t baking soda
1 t cinnamon
1 T almond or vanilla extract
¾ cup of sliced almonds
6 oz craisins

Directions:
Directions:
1. Preheat oven to 325º

2. Combine dry ingredients in a medium mixing bowl.

3. Whisk together eggs, egg whites, and almond or vanilla extract in a separate mixing bowl.

4. Add wet ingredients to dry ingredient, mixing just until moist. Use an electric mixer at medium speed.

5. Add cranberries and almonds.

6. Mix thoroughly.

7. On a floured surface, divide the batter into halves.

8. Pat each half into a log approximately 14" long and 1½" wide.

7. Place on cookie sheet and bake for 30 minutes or until firm.

8. Cool on a wire rack.

9. Reduce oven temperature to 300º.

10. Cut biscotti into ½" slices. Stand upright on cookie sheet.

11. Bake for an additional 20 minutes.

12. Cool and store in a loosely covered container.
