16 oz bag or 3 boxes frozen spinach (whole leaf, not chopped) thawed and squeezed dry
1/2 head garlic - chopped
olive oil
salt
pepper
oregano
Parmesan cheese
1/2 lb shredded mozzarella
ricotta (optional)
hard boiled eggs (optional)

refrigerated bread dough to make one loaf

Directions:
Directions:
Saute garlic in olive oil until tender, but not browned.
Put spinach in a large bowl, add garlic and oil and spices and mix well. Add cheeses. Taste and adjust seasonings

Roll dough to about 1/8" thick. Put spinach in center. If adding eggs, slice them and place along length of spinach. Roll dough over spinach, tuck ends under.

Brush olive oil on top and bake in 350º oven for 23-30 minutes. Cool before slicing.
