3 large garlic cloves
1 C. chopped pecans
4 oz. jar pimentos
12 oz.extra sharp Cheddar cheese (grated)
1 T. olive oil
4 oz. cream cheese softened
1/4 C. mayonaise
1/2 C. finely chopped fresh flat-leafed parsley leaves
Tabasco to taste

Crush garlic cloves. Drain and chop pimentos. Grate Cheddar cheese. In a heavy skillet, cook 2
crushed garlic cloves in oil over moderate heat until pale golden. Discard garlic and stir in chopped
pecans - stirring around about 1 minute or until toasted. Cool. In a bowl stir together cream cheese, mayonnaise and minced garlic (1 clove). Stir in remaining ingredients until well combined. Pack mixture
into a crock or desired container, cover with plastic wrap and chill atlas one day and up to 4.
When ready to serve, let mixture send at room temperature for at least 30 minutes. Serve with crackers
Makes approximately 3 1/2 Cups
