2 Cloves of Garlic
1/2 Tsp. Onion Powder
1 Tsp. Oregano
1 Tsp. Salt
1/2 Tsp. Smoked Paprika
1/2 Cup V-8 Juice (or tomato juice)
3 Tblsp. Olive Oil

3 Cups French or Italian Bread
Olive Oil
1-1/2 Cup Parm Cheese

Romaine Lettuce/Tomatoes/Cucumbers/Juice of 1 Lemon

Directions:
Directions:
Marinate chicken pieces (I use thighs) in first 7 ingredients for 4 hours or more.

Remove Chicken from Marinade and roast in oven at 400 degrees for 30 minutes on a cookie sheet.

Toss bread with olive oil and 1/2 cup parm cheese.

After 30 minutes add the bread around the chicken pieces and cook another 20 minutes.

Let chicken rest for 10 minutes.

Make a salad of romaine, tomato, cucumber.

Add chicken juices, lemon, rest of parm cheese and bread and toss.

Top with the Chicken.

This is a modified Giada receipe - she used fennel which I don't care for but I like the hardy quality of the Romaine.
