2 pounds watermelon rind
2 cups cider vinegar
2 cups water
4 cups sugar
1 stick cinnamon
1 t whole cloves
1 t allspice
1 lemon, sliced thin

Peel watermelon rind removing dark outer skin and and remove all pink portion from rinds. Cut rind into 1" x 2" pieces or other uniform small size. Soak rind overnight in brine made by dissolving 1/2 cup salt per each quart water. Drain rind, rinse in clean cool water.

Cook rind in fresh water until tender. Drain. Combine remaining ingredients and boil together for 5 minutes. Add rind a few pieces at a time and cook until rind is clear. Pack rind in hot sterilized jars. Cover with boiling syrup and seal.
Makes 2 pints

Spices may be tied in cheesecloth bag if desired. Discard prior to canning
