8 tablespoons (1 stick) unsalted butter
4 eggs, beaten
Two 17-ounce cans creamed corn
Two 5-ounce cans evaporated milk
1 tablespoon sugar
6 tablespoons matzo meal (can substitute cornmeal)
1 tablespoon salt, or to taste

Directions:
Directions:
Preheat the oven to 350 º. Butter a 2-quart casserole.

Melt the butter in a saucepan or in the microwave, and let cool a bit. In a bowl, combine the rest of the ingredients and add the cooled melted butter. Pour into the casserole.

Place the casserole in a pan filled with 1 1/2 inches of hot water. Bake until set, about 1 1/2 hours.
