cake batter
1 1/2 cup sifted Softasilk Flour
1 cup sugar
2 t baking powder
1/2 t salt

add
1/3 cup soft shortening
2/3 cup milk
1 t vanilla
1/2 t lemon flavoring if desired

beat 2 minutes

add 1 egg

beat 2 more minutes

Directions:
Directions:
melt 1/3 cup butter in heavy 10" skillet. Sprinkle 1/2 cup brown sugar packed evenly over butter. Arrange drained pineapple on the butter sugar coating.
Pour cake batter over fruit. Bake until toothpick comes out clean 40 to 50 minutes. Immediately turn on serving plate. Leave pan over cake a few minutes.
