Acini de Pepe Salad


Ingredients:

1 cup sugar
2 T flour
½ t salt
2 eggs, beaten
1¾ cups of pineapple juice, drained from fruit
16 oz Cool Whip
1 T lemon juice
1 pound box of Acini de Pepe
2 cans of chunk pineapple, drained
3 mandarin oranges, drained

Directions:
Directions:
1. Cook 1st 5 ingredients together over medium heat until thickened, stirring constantly.

2. Add lemon juice and cool to room temperatures.

3. Cook pasta according to package directions, until tender. Drain and rinse.

4. Add pasta to sauce and stir. Keep overnight in the fridge. (Or a few hours)

5. Add remaining ingredients and stir.

Keeps up to 1 week in the refrigerator. Can be frozen. This is a favorite of my granddaughter, Haley. She has been very creative by adding her own selection of fruits.
