Upside-Down Peach Gingerbread Recipe

1/2 cup butter
1/2 cup brown sugar
1 large can sliced peaches, drained
For Gingerbread:
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp salt
1/2 tsp cloves
1/4 tsp nutmeg
1/2 cup butter, room temperature
1/2 cup molasses
1/2 cup sugar
1/3 cup brown sugar
1 egg
3/4 cup hot coffee

Directions:
Directions:
In a cast iron skillet, melt the butter and brown sugar.
Arrange drained peaches over top of brown sugar. Keep the skillet warm.
In a small bowl, blend together flour, baking soda, cinnamon, ginger, salt, cloves and nutmeg.
In the mixer bowl, beat butter, molasses, sugar, brown sugar and egg.
Add flour ingredients slowly and then pour in hot coffeel
Mix and pour batter over hot peaches.
Bake at 350º for 40 minutes or until browned around edges and done in the middle.
Serve from skillet in wedges or invert on plate and top with whipped cream.
