3 eggs
1 cup sugar
3 T water or milk
1⅓ cups cake flour
2 tsp baking powder
1/2 tsp salt
1½ tsp baking powder
1 T grated orange or lemon rind

Directions:
Directions:
Beat eggs until thick and lemon colored.
Gradually add the sugar and continue beating.
Add liquid and citrus rind and beat.
Sift flour; measure and add salt and baking powder. Sift again.
Sift slowly over egg mixture, folding in with a wire whisk.

Line 12x16x1/2 inch jelly roll pan with waxed paper.
Spread mixture onto waxed paper. It should not be over 1/4 inch thick in pan.
Bake at 400º for 12 to 15 minutes.
Sprinkle confectioners sugar onto clean cotton cloth and immediately turn baked cake onto the powdered sugar.... roll up towel.
Cool completely.
Unroll and carefully remove waxed paper, removing hard crusts.
Fill cake roll with desired filling and reroll without the towel.
Cut wirh serrated knife into serving size pieces.

Jelly rolls can be filled with your favorite jelly, pudding, or just whipped cream with chopped fruit.
I like to fill with ice cream and then whip cream, adding dry jello mix or dry pudding mix to coordinate with the ice cream and spread over top of jelly roll as frosting. Refreeze.
Examples: Cherry vanilla ice cream.... whipped cream with cherry jello.
Chocolate Chip ice cream .... whipped cream with chocolate pudding mix.
Strawberry ice cream... whipped cream with strawberry jello.
