For Pork Rub
2 garlic cloves
¾ tsp kosher salt
1 Tbsp chopped peeled ginger root
1 tsp curry powder
1 one pound pork tenderloin

For Compote
2 Tbsp vegetable oil
1 medium onion chopped
¾ lb. tomatoes cut into 1 inch pieces
3 large peaches chopped
2 tsp chopped fresh thyme

Prepare Compote
In a large saute pan, soften onion for about 5 minutes. Add tomatoes and peaches until softened. Add thyme and simmer until desired consistency about 8 minutes. Adjust seasoning to taste.

Prepare Pork
Mash garlic, ginger, salt and pepper to a paste. Rub all over the tenderloin. Either grill on an outdoor grill or sear with 2 Tbsp vegetable oil in a cast iron skillet, until the thickest part registers 145 degrees. Let pork rest covered for 10 minutes.

Serving Suggestion
Slice tenderloin into ½ thick slices and surround with compote on a platter.
