6 lbs fresh tomatoes, remove core and cut into chunks
1 yellow onion, peel and roughly chop
8 garlic cloves peeled

1/2 c EVOO
2t Kosher salt
2 t. dried oregano
1 t sugar

To can: omit EVOO and add 2T lemon juice to each quart jar.

Put first three ingredients in batches in blender. Blend until smooth. Transfer to pot with heavy bottom and simmer uncovered.

Add last four ingredients. Stir in and let simmer 60 to 90 minutes. Use immediately or allow to cool and refrigerate or freeze.

You can also add capers, olives, or red pepper flakes.

I compared this recipe with "seasoned tomato sauce" recipe in the Ball Blue Book. The main difference was adding lemon juice to the jars before filling and processing for 40 minutes in a hot water bath. I had 24 lbs of tomatoes which made 9 quarts and have yet to try the canned product.
