3 cups of cubed cooked chicken
2 cups of uncooked macaron1
½ cup of cubed american cheese
1 small onion, minced
½ cup of celery, minced
½ cup of chopped green pepper
1 8 oz can of sliced water chestnuts


1 can of cream of mushroom soup
1 can of cream of chicken soup
1⅓ cup of milk
1 can of chicken broth
¼ cup of melted butter
⅔ cup of crushed saltines (about 20 crackers)
¾ cup of cashew halves



Directions:

1. Grease a 9x13 inch pan.

2. Layer the first 7 ingredients as listed, in the baking pan.

3. In a bowl combine the soups, milk and broth. Pour over the ingredients that have been layered in the pan.

4. Toss together the melted butter and cracker crumbs. Sprinkle over the ingredients in the pan.

5. Top with cashews.

6. Bake at 350º 40 minutes.

My friend Betty Mahnke would make this at Christmas time. She would treat her co-workers to a beautiful meal. She would cut little stars out of red and green peppers and place them on top of the casserole as it baked. Very festive!
