1 ¾ c. Sifted All Purpose Flour
2 tsp. Double Acting Baking Powder
¼ tsp. Baking Soda
½ tsp. Salt
⅓ c. Soft Butter Flavor Shortening
⅔ c. Granulated Sugar
2 Eggs, unbeaten
1 c. Mashed Ripe Bananas (2-3)

Directions:
Preheat oven to 350º F and grease a 9" x 5" x 3" loaf pan or muffin pan. Sift flour, baking powder, soda and salt.

With mixer at medium speed, thoroughly mix shortening and sugar, then with eggs, until very light and fluffy - about 4 minutes.

At low speed, beat in flour mixture, alternately with bananas until smooth; turn into pan.

Bake 50 min. to 1 hour until toothpick comes out clean.

2 mall loaves: Bake 25-30 min
12 muffins: Bake 13 - 15 min.
