Brownies:
1¼ cups sugar
1 egg
½ cup oil
2 tsp vanilla
2 cups finely grated zucchini
2 cups flour
1 tsp salt
1 tsp baking soda
½ cup cocoa
½ cup nuts (optional)
½ cup coconut (optional)

Frosting:
2 cups powdered sugar
3 Tbsp butter
3 Tbsp cocoa
1 tsp vanilla
3 to 5 Tbsp milk

Directions:
Directions:
Preheat oven to 350º. Sift together flour, salt, soda, and cocoa; set aside. In a mixer bowl beat together sugar, egg, oil, vanilla. Add in zucchini, stirring by hand. Add in flour mixture, stirring by hand. Add in nuts and/or coconut, if desired. Bake at 350º in a 13X16-inch pan for 20 minutes. Cool and top with frosting. Can also be cooked in a 11X16 or 12X17-inch pan.
