1 lb plus 2 tbsp butter, divided
2 ¼ cups sifted powdered sugar, divided
2 tsp vanilla, divided
1-2 6 oz cans evaporated milk, divided
¼ salt
2 cups sifted all purpose flour
½ lb( about 28) colored candy caramels
1 cup chopped pecans
6 oz package of semi-sweet chocolate chips

Directions:

Preheat oven to 325º

Cookie Base:
Cream ¾ cup butter
Add ¾ cup sifted powdered sugar and cream well
Add 1 tsp vanilla, 2 tbsp evaporated milk, and ¼ tsp salt- mix well
Blend mixture with 2 cups sifted all purpose flour
If necessary, chill for better handling
Roll out dough, ½ at a time, on a floured surface into a 12x8 triangle
Trim the sides
Cut dough into 3x1½ inch rectangles or 2 inch squares
Place on an ungreased cookie sheet
Bake for 12-16 minutes until lightly browned
Cool--add caramel filling, then icing (see below)
Decorate with chopped pecans if desired

Caramel Filling:
Combine on top of double broiler colored candy caramels and ¼ cup of evaporated milk
Heat until caramels melt, stirring occasionally
Remove from heat
Stir in ¼ cup butter, 1 cup sifted powdered surgar, and 1 cup chopped pecans

Chocolate Icing:
Melt chocolate chips with ⅓ cup of evaporated milk over low heat
Remove from heat
Stir in 2 tbsp butter, 1 tsp vanilla, and ½ cup sifted powdered sugar
