Ingredients:  
1 1/2 lb boneless skinless chicken breast, thin sliced.
2 T olive oil
1 C heavy cream
1/2 C chicken broth
1 t garlic powder
1 t Italian seasonings
1/2 C parmesan cheese (fresh)
1 C Spinach, chopped
1/2 C Sun dried tomatoes
1/2 C sweet peppers
1/2 C purple onion

Directions:
In large skillet, add olive oil and cook chickeb for 3 - 5 min each side or till brown and no pink in center. Remove and set aside.

Add heavy cream, chicken broth, garlic, italian seasonings and parmesan cheese. Whisk over medium heat till it starts to thicken. Add peppers and onions and cook 5 minutes. Add spinach and tomotoes and let it simme 5 minutes until spinach wilts. Add chicken back to pan. Serve over pasta with a toss of additional parmesan cheese.
