Cherry's Meatballs


Ingredients:  
Ingredients:  
1 1/2 pounds of lean ground beef with cherries
1 cup fine bread crumbs
1 tablespoon parsley flakes
3/4 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
2 teaspoons Worcestershire sauce
Optional (dash of red pepper)
1 tablespoon minced dry onion
1/4 cup dry milk powder
1/3 cup sweet catsup
Combine above ingredients and mix thoroughly. Shape into one inch balls. Place in a single layer on a greased baking pan at 400 degrees for 12 minutes. 15 minutes if you like meat well done. Remove from pan and put in a large baking casserole. Lower over temperature to 350 degrees. Make cherry sauce below to pour over meatballs. Bake in a covered casserole for 45 minutes. Stir meatballs during baking time.

2 cups tart red cherries (1 quart fresh) or 1 can (16 ounces) pitted tart cherries (drained)
2/3 cup cherry preserves
1 cup (12 ounce bottle) seafood cocktail sauce
2 cans (5 ounce) tomato sauce
Optional ( 2 tablespoons horseradish)
2 tablespoons Dijon mustard
Mix all ingredients in a medium saucepan. Cook over medium heat for five minutes. Pour over meatballs. Make enough sauce for four dozen meatballs.
