2 lbs. baby carrots
¼ cup finely chopped green onions
¼ cup butter
¼ cup honey
1 tsp. grated orange peel
½ tsp. salt
½ tsp. ground cinnamon
¼ tsp. pepper
2 tsp. cornstarch
½ cup orange juice
4 tsp. minced fresh mint or parsley

Directions:
Directions:
Place 1 inch of water in a skillet; add carrots. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until crisp-tender. Drain and set aside.
In the same skillet, sauté onions in butter until tender. Stir in honey, orange peel, salt, cinnamon, and pepper. Combine cornstarch and orange juice until smooth; stir into onion mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened.
Return carrots to the pan. Cook and stir for 2 minutes or until heated through. Sprinkle with mint.
