4 c. sugar
1 c. cooking oil
5 c. flour
4 tsp. baking soda
1 Tbsp. cinnamon
2 tsp. ground cloves
2 tsp. salt
3 ½ c. mashed pumpkin or large solid packed pumpkin
1 c. raisins
2 c. chopped pecans (optional)

Directions:
Directions:
Preheat over to 350º.

Stir sugar and oil together. Sift flour, baking soda, salt, and spices. Add dry ingredients to sugar mixture. Stir in pumpkin, raisins, and chopped pecans. Spray three 9 x 5 inch pans with cooking spray. Divide batter evenly among the three pans.

Bake for 1 hour or until a cake tester comes out clean. Cool in pans on a wire rack. Remove from pans.

Yield: 3 loaves

Do not use a mixer to make this as the batter is much too thick.

I make this to give my mailman, neighbors and friends at Christmas time.
