1 9-inch baked pastry shell

Filling:
3/4 C. sugar
1/3 C. all-purpose flour or 3 T cornstarch
1/4 tsp. salt
2 C. milk
3 slightly beaten egg yolks
2 T. butter
1 tsp. vanilla
3 bananas, sliced

Meringue:
3 egg whites
1/2 tsp. vanilla
1/4 tsp. cream of tartar
6 T. sugar

Directions:
1. In saucepan combine sugar, flour, and salt; gradually stir in milk. Cook and stir over medium heat till bubbly. Cook and stir 2 minutes.

2. Stir small amount of hot mixture into yolks; immediately return to hot mixture; cook 2 minutes, stirring constantly. Remove from heat. Add butter and vanilla. Let cool to almost room temperature so as not to cook the bananas.

4. Place bananas in the cooled pie shell. Top with cooled pie filling.

5. Preheat oven to 350º F.

6. For meringue, beat egg whites with vanilla and cream of tartar till soft peaks form. Gradually add sugar, beating till stiff and glossy peaks form and all sugar is dissolved.

7. Spread meringue over pie filling, sealing to edge of pastry.

8. Bake for 12 - 15 minutes, or till meringue is golden. Cool before serving.
