1 cup white rice
2 cups sour cream
Salt and pepper to taste
1/2 pound monterey jack or pepper jack cheese
7 oz. diced green chiles
3 Tbs. butter
1/4 cup grated parmesan cheese

Directions:
Directions:
In a medium-sized saucepan boil rice according to package.
Let the rice cool.
Drain the green chiles
Preheat oven to 350°.
Mix the cooked rice with the sour cream, cheese, green chiles, salt and pepper.
Scoop the mixture into a buttered (or greased) 1.5 quart casserole dish. Dot the top with butter and sprinkle with the Parmesan. Bake uncovered in the oven for 30 minutes or until golden brown.

Can be made using cauliflower rice.
If you like spice use 1 can of jalapenos and 1 can of green chiles.
