2 chicken breasts, boneless & skinless
1 can Swanson Chicken Broth
2 Tbsp butter
1 lemon
1 Tbsp capers
salt & pepper
olive oil

Directions:
Directions:


1. Cut boneless skinless chicken breasts in half horizontally.

2. Lightly salt and pepper. Optional - grate lemon zest on each filet.

3. In frying pan, sauté chicken in olive oil for 1-2 minutes on each side till lightly brown. Remove chicken from pan.

4. Add 1/2 cup of broth, and 2 Tbsp butter to pan. Gently simmer for 5 minutes.

5. Squeeze half lemon juice into pan, stir.

6. Add chicken and coat both sides with sauce. Sprinkle with capers. Simmer another 5 minutes.

7. Turn off stove. Let sit for 10 minutes.

Serve by squeezing more lemon juice for taste.
