2 lbs. beets
4-5 tsp. vinegar
4-5 tbsp. olive oil
salt to taste
5 crushed garlic cloves

Directions:
Separate the beetroot ends from the stalks and leaves (Save the stalks & leaves). Scrub the beet root skin well.
Boil beet roots in water 1.5 hours. Meanwhile wash reserved stalks and leaves and boil for 15 minutes.
Strain both the roots and leaves and completely cool. Peel the beetroot and cut into slices.
Arrange sliced beetroot along with cut stalks, leaves onto a platter, season with salt.
Dress with vinegar and olive oil to taste, sprinkle with crushed garlic.
