6 Rennet Tablets
¼ Cup Cold Water
2 ⅔ Cup Sugar
2 Quarts Milk (Not Canned)
2⅔ Cup Cream – Heavy – I Use Canned Milk
8 Teaspoons Vanilla

3 Rennet Tablets
2 Tablespoons Cold Water
1⅓ Cup Sugar
1 Quart Milk ( Not Canned)
1⅓ Cups Cream – Heavy - I Use Canned Milk
4 Teaspoons Vanilla

REFRIGERATOR TRAY – 1 Tray
1 Rennet Tablet
1 Tablespoon Cold Water
½ Cup Sugar
1 Cup Milk (Not Canned)
1 Cup Cream – Heavy – I Use Canned Milk
1¼ Teaspoon Vanilla

HAND FREEZER:
DISPERSE rennet* tablets in cold water. Combine remaining ingredients and heat to lukewarm** (110º.) Stir in dissolved rennet tablets quickly and pour into freezing container. Let stand undisturbed for 10 minutes. Pack freezer can in crushed ice and allow to cool before freezing (30 – 40 minutes). This reduces freezing time and assures smooth-textured ice cream. Freeze in 4 parts ice and 1 part salt until dasher is hard to turn. Remove dasher and repack in ice and salt. Let stand about 2 hours. We usually just pour into containers and freeze.

* Rennet changes milk into a smooth, refreshingly cool, delicious custard-like dessert.
** To warm milk to lukewarm, test on wrists as for baby’s bottle. Remove from heat. If milk gets too hot, cool before adding rennet powder.

REFRIGERATOR:
Place freezer tray in freezing compartment and freeze until firm. Remove to bowl, break up with fork and beat until smooth, but still a thick mush. Finish freezing.

CHOCOLATE ICE CREAM:
Follow recipe for Vanilla Ice Cream adding ¾ cup cocoa (not Dutch processed.) Blend sugar and cocoa. Add liquid slowly, making a smooth paste. Continue according to above directions.

This is a family favorite especially Lee’s. Kristen always made him a couple of freezers full for Fathers Day!

We like this because it doesn't have raw eggs in it.
