Ingredients: 12 eggs 1/2 cup mayonnaise 1-2 tbsp horseradish mustard

Directions:1. Cook eggs: put dozen eggs in the 6quart pot with enough water to cover eggs. Bring water to a bubbly boil and cook for three minutes longer.
2. peel eggs and slice the eggs down the middle lengthwise.
3. In a bowl mix the egg yolks, mayonnaise and mustard together until smooth. I mix to taste and texture on this. I like the mix to be smooth and to have a nice bite of horse radish flavor. So what I do is taste it to see if it has enough flavor and if not add more mustard or mayonnaise as needed.
4. Use a pastry bag to place the mix into the eggs. Top with a little sprinkle of paparika
You may also use real horseradish, but be careful not to use too much and drain it a little so it is not watery. Also use regular yellow mustard...1 tbsp.
Alternate: You can add a couple tbsp of sweet pickle relish with 1 tbsp of yellow mustard....instead of horseradish/mustard. |
