Five - six pound trimmed brisket
Garlic salt and onion salt
Black Pepper
1 tbsp. olive oil
1 large onion
1 jar of strawberry jalapeno preserves (8-12 ounces)
1 bottle of dark beer
2 tbsp. of Tabasco sauce

Directions:
Directions:
Preheat oven to 300º. Season the brisket with the garlic salt, onion salt, and pepper and brown it on both sides in the preheated olive oil in a large skillet. Remove from the skillet and place it in a baking pan.

Add the sliced onion to the oil in the skillet and cook it about five minutes until it is tender. Mix the preserves, beer, and Tabasco in a large bowl and add it to the cooked onion in the skillet. Bring the mixture to a boil and cook for five minutes. Pour the entire mixture over the brisket in the baking pan. Cover it with foil and roast it in the oven for four hours or until tender.

Slice the brisket and pour the juices from the pan over it and serve. I served the additional liquid from the pan as an au jus gravy.

The recipe I modeled this from called for apricot preserves and jalapeno Tabasco sauce. However, I used what I had on hand and it was delicious and had just the right heat. You could make it with any flavor of preserves.
