BLUEBERRY-ORANGE BREAD Recipe

2 Tbsps soft butter
¼ cup hot water
½ cup orange juice
1 Tbsp grated orange peel
1 egg
1 cup sugar
2 cups flour**
1 tsp baking powder
¼ tsp baking soda
½ tsp salt
1 cup fresh blueberries
Honey-Orange Sauce

Honey-Orange Sauce:
1 tsp orange rind
2 Tbsp orange juice
2 Tbsp honey

** Spoon flour into dry measuring cup and level. Do not scoop.

Directions:

Preheat oven to 325º
Grease 9 x 5 x 3 baking pan (or a 1½ quart mold)

BREAD
Combine butter and hot water in a bowl.
Add orange juice and rind.
Beat in egg.
Combine dry ingredients and stir into liquids.
Gently fold in blueberries.
Pour into pan.
Bake for 60 – 70 minutes.
Turn out onto rack and spoon Honey-Orange Sauce over the hot loaf.
Let stand until cool

HONEY ORANGE SAUCE
In a saucepan, heat ingredients until honey melts and sauce is smooth
