1 c. sugar
¼ c. canola oil
3 mashed ripe bananas
¼ c. milk
¼ c. sour cream ( or plain Greek yogurt)
1 egg
dash of vanilla
2 c. flour
1 tsp baking soda
¼ tsp. salt
¼ to ½ cup chopped nuts (walnuts)

Directions:
Preheat oven to 350º. Spray 3 to 4 mini loaf pans or use 1 to 2 9 x 5 loaf pans.
Beat oil and sugar in medium bowl. Add milk, sour cream, egg, vanilla and bananas until well blended. Add flour, baking soda and salt mix thoroughly. Fold in chopped nuts. Spoon into pans evenly.
Bake for 40-45 minutes, or until knife comes out clean. If using large loaf pans cooking time will be 60-70 minutes.
