! pd. penne pasta
½ head cauliflower florets
1 c. nonfat or 2 percent milk
1 pd. shredded cheddar cheese
¼ c. Parmesan cheese
1 tbsp. chopped parsley

Directions:
Directions:
Bring salted water to boil and cook the pasta until al dente. in the meantime , cook the cauliflower until soft and transfer to a blender to puree.
Put the pasta and cauliflower puree in a medium sauce pan, add the milk and cheese.
Season to taste.
