One or two pork loin strips depending on the group size being served.

One 14 oz. jar of Don Sazon meat seasoning (Carne Asada) dry mix. Purchase at mexican store or ethnic section of your supermarket.

2-3 med/medium large yellow or white onions.

One bunch of cilantro.

Orange juice.

Briquets for your grill.

Directions:

Pork Loin; cut crosswise in to 3/8 to 1/2 inch slices (like thick Canadian bacon) and set aside.
Dice onions in to approx 1/2 inch squares.
Chop cilantro in to small pieces.
Blend onions and cilantro together and set aside. Do not add water or other liquid. Residual water from washing is ok.
Moisten loin slices with orange juice.
Sprinkle a generous amount of Sazon carne asada mix to both sides of pork slices.
In a large bowl lay down a bed of onion/cilantro mix followed by a layer of loin slices. Alternate doing this until all is used up. Cover bowl and refrigerate a minimum of three hours, overnight is ok too.
Start briquets and get them going. Grill pork loin until done. Not burned or excessively browned, you need to retain some of the moisture otherwise it could turn out dry.

Oh Boy - Oh Boy yer gonna like this!

This recipe is not labor intensive and can easily be made and served either as a main dish or as a "finger food". It is scrumptious!

Substitute chicken or beef for the pork or do all three for variety. Slice all meats thin as in above. The preparation is the same.

This recipe comes from our family reunion at Lake Tahoe 2017 (Barbara's family) where one of the lady's husband, Jeremy, is mexican and a "Rightly so, wannabe budding gourmet chef"....He just didn't make enough!
