4 Bone-in Pork Chops, 1-1/2 inch thick, fat trimmed
5 Tbsp. Butter
1 med. Onion, finely chopped
1/2 cup celery, finely chopped
1-1/2 cup Bread Crumbs
1/4 tsp. Sage
1/4 tsp. Basil, ground
1/2 cup Parsley, chopped
1/2 tsp. Salt
1/2 tsp. Black Pepper

For the Stuffing: In a skillet, melt 3 Tbsp. butter. Add celery and onions, stirring until tender. Add seasoning and stir. Remove from heat and let cool a bit. In medium bowl, place bread crumbs and gradually mix in celery, onion, seasoning mix. Add hot water if mix is too dry.

Slit chops to make a pocket. Stuff chops, secure pockets with toothpicks, and set aside.

In a Dutch oven or electric skillet, melt remaining 2 Tbsp. butter and brown chops on both sides over medium-high heat. Cook in at 350 degrees for about 20 to 30 minutes, or until the chops reach 150 degrees.
