1 Rack Baby Back Ribs
Salt and Pepper
Garlic Powder
Onion Powder

Sauce:
2 slices Smoked Bacon
3 sprigs Fresh Thyme
1 Onion, rough chopped
3 Cloves Garlic, smashed
2 cups Catsup
2 Tbsp. Peach Preserves
1 Tbsp. Dejon Mustard
1 tsp. Paprika
1 tsp. Cumin
1/4 cup Molasses
1/4 cup Brown Sugar
2 Tbsp. Red Wine Vinegar
1 cup Water
Salt and Pepper

Directions:
Directions:
Place ribs on baking pan with rack and sprinkle with salt, pepper, garlic powder and onion powder. Slow cook at 250 degrees for about 2-hours, the first 90-minutes being tented with aluminum foil.

Wrap bacon around thyme and tie in a bundle. Sear in large skillet. Combine other ingredients, mixing well. Simmer until onion is softened. Spoon about 1-1/2 cup sauce into bowl for basting. Mop over the ribs after 1-hour and every 30 minutes thereafter. Remove and let stand for 10-15 minutes before serving.
