4 lb. Baby Back Ribs,Spareribs or Country-Style Ribs
1-1/2 tsp. Salt
1/4 tsp. Black Pepper
32-oz. jar Sauerkraut, un-drained
1/2-3/4 c. Water
4 Tbsp. Brown Sugar
2-3 Tart Apples, peeled and chopped (to taste)
1 med. Onion, rough chopped

Preheat oven to 450 degrees.

Cut ribs into serving-sized pieces. Place in ungreased roasting pan or Dutch oven. Sprinkle with salt and pepper and bake for 30-40 minutes, turning once, to brown both sides.

Reduce heat to 325 degrees.

Remove ribs, drain and discard drippings. Combine water, sauerkraut, brown sugar, apples (if used) and onions. Place half of the mixture on bottom of pan, then the ribs and top with remaining mixture. Cover and bake (see Cooking Time below), or until ribs fall off the bone, spooning pan liquid over the ribs every 30 minutes. Remove and let stand for 10-15 minutes before serving.

Cooking Time:
Baby Back Ribs => 2 hours
Spareribs => 2-3 hours
Country Style Ribs => 4 hours minimum
