2 lb. Sirloin Steak, 3/4" thick
3 Tbsp. Butter
1/2 tsp. Salt
2 med. Onions, chopped (about 1 cup)
1 cup Beef Broth
3 Tbsp. Soy Sauce
1 Clove Garlic, minced
2 Green Peppers, cut into 1” squares
2 Tbsp. Cornstarch
2 Tbsp. Cold Water
2 Tomatoes, peeled and cut into eighths
3-4 cups Rice, cooked

Trim fat from meat and cut into 4-6 pieces (or 1” squares). Season one side of the meat with half the salt; brown meat in butter on one side flip and season remaining side and brown. Remove meat and keep warm. Add onion and cook stirring until tender. Stir in broth, soy sauce and garlic. Return the meat, cover and simmer 10 minutes or until meat is tender. Add green pepper, cover and simmer 5-minutes more.

Blend cornstarch and water. Gradually add to meat mixture, stirring constantly, until it thickens and boils. Boil, stirring, for 1-minute. Add the tomatoes and simmer for 2-3 minutes. Serve over rice.
