1/2 tsp. Salt
1/4 tsp. Pepper
1-1/2 lbs. Sirloin, cut into thin strips or 1" cubes
1/4 c. Butter
1/2 c. Onions, finely chopped
1/2 c. Carrots, finely chopped
8 oz. Mushrooms, sliced
1/2 c. Brandy or Sherry
12 oz. Beef Broth, divided
3 Tbsp. Tomato Juice (Optional)
1 Tbsp. Mustard
1 Tbsp. Worcestershire Sauce
1/4 c. Corn Starch
1 c. Sour Cream
Egg Noodles or Wild Rice, Cooked as directed.

Season meat with salt and pepper and brown with butter in cast iron skillet over high heat one layer at a time allowing skillet reheat between layers. Remove from heat to nearby plate as each layer browns. Add more butter, onions and carrots and continue cooking until softened. Turn heat to medium, add mushrooms, broth, juice, mustard Worcestershire sauce, continue cooking for 2-3 minutes. Mix equal parts corn starch and broth in small bowl. Add to vegetable mix, stirring to combine. Return meat, cover and simmer about 30-minutes, stirring occasionally.

Meanwhile, prepare noodles or rice as directed.

When ready to serve, remove meat add sour cream, mixing well. Return meat to sauce and serve over noodles or rice.
