1 Chicken Breast, skinned and deboned, butterflied
1/4 tsp. Salt
1/8 tsp. Pepper
2 tsp. Cream Cheese
1 tsp. Fresh Parsley, minced
1/8 tsp. Garlic, minced
1-oz. Cooked Ham, very thinly sliced
1-1/2 tsp. Breadcrumbs
1/2 tsp. Italian Seasoning
1/2 tsp. Parmesan Cheese, grated
1/2 tsp. Paprika
1/4 cup Milk
Vegetable Cooking Spray
2 tsp. Butter, melted
1 tsp. Lemon Juice
Fresh Oregano as garnish

Place chicken between two pieces of heavy-duty plastic wrap and pound to 1/4” thickness using a meat mallet.

Combine cream cheese, parsley and garlic, stirring well. Place half of ham on each chicken breast. Spread cheese mix over ham. Roll up chicken, jellyroll fashion, starting with short end and tucking ends under. Secure chicken rolls with wooden skewers.

Combine breadcrumbs, Italian seasoning and Parmesan cheese. Dip chicken rolls in milk and dredge in breadcrumb mix. Place seam side down in shallow baking pan coated with cooking spray.

Combine melted butter with lemon juice and drizzle over chicken. Sprinkle with Paprika. Bake uncovered at 350 degrees for 30 minutes or until tender. Garnish with fresh oregano and lemon slices.
