6 med. Zucchini, sliced lengthwise
1/2 lb. Italian Sausage
1 med. Onion, chopped
1 clove Garlic, crushed
1/3 cup Italian Bread Crumbs with Oregano/Basil
1/4 cup Parmesan Cheese, grated
1/4 cup Mozzarella Cheese, shredded

Directions:

Cook zucchini in boiling water 10 minutes. Drain and scoop out shells. Mash insides, drain, and set aside in a shallow bowl.

Remove sausage casings and mash. Sauté approx. 5 minutes. Add onion and garlic. Sauté 3 minutes more. Stir in zucchini and bread crumbs. Spoon into zucchini shells, sprinkle with cheeses, bake at 350 degrees 30 minutes or until hot throughout.
