6 lg. Green Peppers
1-1/2 tsp. Salt
1/2 tsp. Black Pepper
3 cups Ham, cooked and diced or ground (Alternately Ground Beef)
1-1/2 cups Rice, cooked
1/4 cup Butter
1 med. Onion, diced
4 Peppercorns
6 Whole Cloves
1 cup Tomato Soup
1 lg. can Diced Tomatoes


Directions:

Wash peppers, cut thin slices around stem end. Remove stems and seeds. Cook peppers in boiling, salted water in Dutch oven for 5-minutes. Remove from water, drain and reserve liquid.

Combine ham or ground beef, rice and pepper. Fill green peppers with mixture. Melt butter in Dutch oven. Add onion and sauté until golden brown.

Tie peppercorns and cloves in small piece of cheesecloth. Add tomato soup, tomatoes, spice bag and reserved liquid. Mix well. Stand stuffed peppers upright in sauce. Cover and simmer over low heat for 30 minutes.
