Spare Ribs, up to 20-25 servings or as few as 2-4 servings.
Your favorite Rub.
BBQ sauce is optional but if used it should be applied just minutes before serving.
Briquets. 10 pounds.
16 Wire hooks, heavy duty like 1/8 inch diameter. I use welding rod with the flux cleaned off.
Two or three small chunks of oak or etc to produce smoke.

Spare ribs....Quantity is your choice, one or two racks up to eight racks.

Cut each rack in to 6 to 8 inch long pieces. Not any longer then 8 inches.

Apply your favorite rub.

Using wire hooks, hook each set of cut ribs as seen in the above video.

Hang hooked ribs in barrel when briquets are ready. See video. Add 2-3 small chunks of oak to briquets for smoke at this time.

Allow to cook/smoke for minimum 2.5 hours or maximum for four hours. I've had success at even 10 hours and without drying out or burning!

The adding of BBQ sauce is your choice. However, adding the sauce adds to your labor. I've had excellent results either way. See video.

This is a good fellowship cookout that adds to the ambience of family and friends. You will get plenty of compliments because this is a truly an excellent way to do ribs and the flavor is to die for!

Ribs can be substituted for chicken or other meats with equal results. I split the chicken right down the center from neck to tail and hang each half with a single wire hook and cook/smoke just as I would the spare ribs.

I once did Cornish Hens and left them on the hook in the barrel overnight and they were excellent that next day. I don't think it is possible to burn anything!

If you don't want to go through the labor of making a 55 gallon barrel BBQ I think one of those "Store Bought" smoker barrels like at Lowe's, etc. would work just fine.
