2 large grapefruit
1/4 tsp. salt
1/2 c. canned whole-berry cranberry sauce
3 tbsp. oil
I tbsp. honey
1/4 tsp. ground cloves
1 3lb. Chicken, cut into 8 pieces

Heat oven to 350 degrees. Have a shallow 3-quart baking dish ready. Peel grapefruit, removing all white pith. Holding over a bowl to catch juices, cut out each section of fruit, letting it fall into the bowl. Squeeze juice remaining in membranes. Drain juice into a small saucepan. Stir in cranberry sauce, honey, clove and salt. Bring to a boil over medium-heat, stirring once or twice.

Remove from heat, stir in grapefruit sections. Heat oil in a large skillet over medium-high heat. Add chicken and cook about 6 minutes until lightly browned, turning once. Arrange in baking dish in a single layer. Brush with some of the grapefruit sauce. Bake 45 minutes or until juices run clear when chicken is pierced, basting 4 times with sauce. Heat remaining sauce. Arrange chicken on serving platter. Spoon some sauce and grapefruit section on top. Serve with remaining sauce (I usually pour all the sauce over the chicken and then bake.).
