2 lbs. Ground Chuck
2 tsp. Butter
1/2 cup Green Pepper, finely chopped
1 lg. Yellow Onion, coarsely chopped
2 tsp. Minced Garlic
1/2 Cup Beef Stock or Broth
1 can Tomato Soup (undiluted)
1 lg. Can Diced Tomatoes
1 can Kidney Beans (See Note below)
1/2 tsp. Cumin
1/8 tsp. Nutmeg
1/2 tsp. Oregano
2-3 tsp. Salt
1/2 tsp. Pepper
1 Tbsp. Chili Powder (use your judgment - may want more or less)
1 tsp. Red Pepper (use your judgment – may want more or less)

Directions:
In large soup pot or large skillet, brown hamburger in butter, mashing while cooking. Drain off excess grease, then add onion and green pepper and continue to sauté until onions are soft. Add garlic and saute' for couple minutes; then deglaze with Beef Broth. Remove to slow cooker and add remaining ingredients. Bring to a boil; then simmer about 2 hours minimum.

Serve with the options of spaghetti base as well as onion and cheese toppings.

Note: If you don’t care for the texture of the beans, run them through a food processor prior to mixing them into the slow cooker. You'll still get the bean flavor without seeing the beans.
