2 lbs. Trout or Other Fish Fillets
4-5 Tbsp. each Melted Butter and EVOO
1 tsp. Lawry’s Seasoned Salt or Morton’s Nature’s Seasoning
1 tsp. Grill Mates Lemon-Pepper with Herbs
1 tsp. Garlic, minced
1/2 med. Onion, thinly sliced
1-2 Lemons, sliced
Juice of 1 Lemon
1 Tbsp. Parsley, chopped

Cut fillets into serving size. Melt butter with EVOO in large cast-iron skillet over medium-high heat. In small bowl, blend seasoning, herbs and garlic. Sprinkle mix liberally over both sides of fillets. Place fillets skin-side down in skillet. Sprinkle onion and lemon slices over fish. Fry, spooning butter/oil over fish often, until just cooked, about 5-minutes.

Remove fish, onion and lemon slices to serving plates. Remove skillet from heat, add lemon juice scraping browned bits from bottom. Spoon over fish, top with parsley, and serve.
