24 oz. Mild Breakfast Sausage (See note below)
10 Eggs, lightly beaten
1 cup Sour Cream
1 lg. Onion, chopped
1 Green Pepper, chopped
1 Red Pepper, chopped
1 Zucchini, chopped (if in season)
16 oz. Mushrooms, sliced
3 cups Sharp Cheddar cheese, shredded (divided)

Directions:
Directions:
Preheat the oven to 350 degrees.

Cook sausage. Drain grease and set aside to cool slightly.

In large, deep baking dish, add sausage, eggs, sour cream, onion, peppers, zucchini, mushrooms, and 2 cups cheese and stir to mix. Bake for 30 minutes or until golden color. Sprinkle remaining 1 cup of cheese over top for last 5-minutes.

Cook’s Note: Try adding a package of Frozen Hash Browns the mix and chopped, shaved ham in lieu of the breakfast sausage.
