Filling: 4 oz. Sliced Ham, finely chopped 1 c. Green Onions or Scallions, finely chopped 1 c. Mushrooms, sliced and rough chopped 1 clove Garlic, minced (1 tsp. jarred Minced Garlic) 2 Tbsp. Butter 1 tsp. EVOO 8 Eggs, beaten 1 c. Shredded Cheddar Cheese, divided 1/2 tsp. Salt 1/4 tsp. Pepper 2 Scallions, thinly sliced as garnish Paprika as garnish

Directions:Preheat oven to 400º F.
In large bowl, add hash browns, egg, salt and pepper, stirring to combine. Coat 8 large muffin cups with cooking spray. Press potato mix thinly into bottoms and up sides. Brush with melted butter and bake for 10-15 minutes, or until brown and beginning to crisp. Set aside and let cool.
In medium skillet, sauté onions and mushrooms in EVOO and butter until tender. Add garlic and sauté for 1-2 minutes more. Remove from heat, place in medium bowl and let cool.
Add eggs, ham, 3/4 cup cheese, salt, pepper and cheese to onion-mushroom-garlic mix. Whisk to combine, then divide into nests, filling to 1/4" below tops. Bake until eggs are nearly done, about 10 minutes (test with toothpicks). Remove from oven and sprinkle scallions, paprika and remaining cheese on top of each nest. Return to oven for 1-2 minutes, or until cheese has melted. |
